INGREDIENTS:

• 8oz Wagyu (Denver cut or similar)
• 1/2 tsp cracked salt & pepper
• 1 1/2 tbsp sesame oil
• 1 tsp fish sauce
• 3 tbsp rice vinegar
• 1 tbsp sweet chili sauce
• 1 to 2 tsp Gochujang (depends how spicy you like it)
• 1/2 lemon juice
• 2 tsp reduced soy (or 3 tsp tamari)
• 1 garlic clove (minced)
• 1 tsp grated ginger
• Thinly sliced green onion (scallion)
• 1/2 cup quinoa
• 1 cup water
• 1 tbsp olive oil

DIRECTIONS:

1. Boil quinoa with water, then simmer covered for 15 min.
2. Spread on sheet pan, drizzle olive oil, and bake at 400°F for 12 min.
3. Season Wagyu, heat cast iron skillet with sesame oil on high.
4. Sear steak 2 min per side. Let it cool.
5. Combine all wet ingredients + garlic, ginger, scallion.
6. Thinly slice steak (1/8”), plate it, and pour marinade.
7. Top with scallions and crispy quinoa. Enjoy!
